Summary :

Assists the Executive Chef in the daily operations of the kitchen, including menu development, inventory and purchasing of supplies, and cost control. Oversees the activities of the kitchen staff and monitors food production and presentation in the absence of the Executive Chef.

Primary Duties

  • Prepares daily production list.

  • Ensures that all stations remain stocked before and during the meal period.

  • Verifies that kitchen staff follows all recipes and portions servings correctly.

  • Keeps kitchen, dish, and storage areas clean and organized.

  • Places food and supply orders as directed.

Additional Responsibilities

  • Assist in hiring and training employees according to company standards. Sets excellent customer service and work examples. Manages staffing levels throughout shift. Oversees kitchen labor and food cost to budgetary requirements. Perform additional related responsibilities as directed by management.

  • Perform other job related duties as assigned.

Qualifications: Education, Experience, and Certification(s)

  • 2 to 3 years College or culinary training or extensive cooking and production experience required.

  • 3 to 5 years progressive professional cooking experience requirement.

  • A minimum of two years working in management preferred.

  • Culinary experience in a hotel or banquet hall preferred. SevSafe (Renew every 5 Years) certification required.

Knowledge, Skills, and Abilities

  • Strong interest in training and coaching Ability to fill-in for any kitchen position Demonstrated leadership ability.

  • Computer literacy: MS Word and Excel Works well under pressure.

  • Commitment to quality service, and food and beverage knowledge.

  • Basic math skills.

  • Understanding of proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicer, knives, and dish machine.

  • Professional communication skills, oral and written.

  • Ability to work in a high-energy and demanding environment.

  • Organization and leadership skills.

  • Demonstrates strong leadership skills and is a team player. Can effectively solve problems.

While performing the duties of this job, the employee is regularly required to talk and hear. The employee frequently is required to stand, walk, sit, use hands to finger, handle, or feel, and reach with hands and arms. The employee will be required to climb or balance and stoop, kneel, crouch, or crawl. The employee must occasionally lift and/or move up to 25 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus. The employee must be able to work in a standing position for long periods of time (up to 5 hours).

Work Environment

While performing the duties of this job, the employee is occasionally exposed to outside weather conditions. The noise level in the work environment is usually quiet
