JOB TITLE: EXECUTIVE CHEF (7 AM TO 5 PM) JOB OVERVIEW: The Executive Chef position is responsible for the Production Department to include Cooks and Sanitation and the overall kitchen operation in accordance with the standard/prescribed procedures of the Dietary Food and Nutrition Department. Provides dietary services for patients, families and staff. Maintains a professional demeanor in accordance with the service excellence standards while interacting with internal and external customers to include coworkers. Performs all work according to the mission, vision and values of Manatee Memorial Hospital. Other duties as assigned. Key Responsibilities: Supervises food production personnel. Complies with all HACCP policies and procedures. Guide and assist in training of less experiences Chefs and Cooks. Prepare foods by operating a variety of kitchen euipment to measure and mix ingredients, washing, peeling, cutting and shredding fruits and vegetables and trimming and cutting meat, poultry, or fish for culinary use. Provides the highest qualty of serice to customers at all times. Tastes products, read menus, estimates food requirements, check production, and keep records in order to accurately plan production requirements and requisition supplies and equipment. Produces small to large batch goods using advanced and full range of classical and contemporary cooking, plating and garnishing techniques. Follows complex recipes and/or product directions for preparing, seasoning, cooking, tasting, carving and serving soups, meats, vegetables, desserts and other foodstuffs for consumption in eating establishments. Selects receipes per menu cycle, prepares bakery items, receives inventory, moves and lifts foodstuffs and supplies and prepares meals for customers requiring special diets. Knows, understands, and adheres to syytem/hospital/department polocies and procedures. Adheres to hospital/department attendance policy. Effectively communicates both orally and in writing English. Is knowledgeable about patient safety standards and demonstrates knowledge of department specific safety procedures. Hands on chef experience required. Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls and presentation required. Institutional and batch cooking experiences required. ServeSafe Food Handler Certification preferred. Extensive catering experience a plus. High Volume, complex foodservice operations experience highly desiraable. Must be experienced with computers to include Microsoft Office (Word, Excel and Power Point. Healthcare experience preferred. Current Florida Driver's License required. Mimimum Age: 18 years of age Work Conditions: Must be able to stand on your feet for prolonged periods of time and be able to lift 25 pounds.
