Job Summary The Assistant General Manager - Food Operations direct all aspects of the operations for Drug Enforcement Administration (DEA) including the DEA Cafeteria, Coffee Shop, Golden Eagle, and all DEA catered events. Ensure all food, beverage, materials, supplies, uniforms, and quality control of all work performed is being done in accordance with the contract and ServiceSource standards. Work closely with Sous Chef and Supervisor to schedule all staff and manage food cost and labor control. Manage and monitor the performance of staff to ensure adherence to all service standards and productivity standards to provide exceptional guest satisfaction.

Ensure all work schedules, time-sheet corrections, and vacation requests are approved and coded correctly in Workday in accordance with policy for all front of house employees. Work with staff to routinely check food/beverage on serving lines and during meal periods to ensure the employees are recording temperatures in log, audit staff to ensure refrigeration temperatures and dish machine temperatures are recorded and finally maintain/inspect cafeteria quality control check lists for all venues at DEA. Directly responsible for the purchase of all food, beverage, paper supplies, chemicals, uniforms and maintaining a par level and cost controls with Sous Chef and Supervisor as well as updating inventories on all supplies and equipment as required. Conduct interviews to maintain staffing levels to contractual requirements and ensure that all applicable training takes place for associates on a weekly, monthly, and annual basis as needed and support Sous Chef and Supervisor to complete annual reviews for all employees. Manage and motivate all personnel through monthly, quarterly, and annual employee recognition programs, including coordinating holiday celebrations and quarterly parties, and working with Rehab and Van Services to support employee needs.
Additional Responsibilities
Maintain appearance, upkeep and cleanliness of all food and beverage equipment and monitor employee dress codes, according to policies and procedures, with a strong focus on providing exceptional and accurate customer service to both internal and external individuals. Maintain open lines of communication with General Manager to include any potential contractual issues as well as employee performance issues and ensure proper progressive disciplinary procedures are in place and in use. Inspect to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met and report maintenance issues to the QA and follow up on weekly inspections with corrective action plans as well as perform daily facility inspections as needed. Exhibit a positive and involved team attitude to all and promote positive relations through an environment that encourages open communications, trust, and mutual respect between your department, culinary and catering departments. Organize multiple projects; manage and prioritize multiple tasks and meet deadlines. Ensure supervisors are posting the weekly forecast and post menus daily for the current meal and the next day meals and electronic menu boards are updated. Report all program participant behavioral issues to the Vocational Rehabilitation Specialist, maintaining a call out book for monthly auditing, and ensure emergency contacts are up to date. Stand in for Supervisors during call-outs or staffing shortages and maintain an inclement weather/Code Red team. Before and after meal periods, audit cashiers and supervisors to ensure proper handling of cash procedures are followed. Perform other responsibilities as assigned.
Qualifications: Education, Experience, and Certification(s)
High school diploma or General Education Development (GED) required. Minimum of five (5) years of professional experience managing a high-quality commercial food and beverage operation is preferred. Must be able to pass and maintain a Tier 5 FBI Security Clearance required. Must possess ServSafe (Renewing every 5 Years) certification or the ability to obtain it within 60 days required.
Knowledge, Skills, and Abilities
The ability to utilize required software applications required. Working knowledge of food and labor cost controls required. Confident, clear, and professional written and verbal communications skills. Ability to manage in an environment with focus on client and customer services, entrepreneurship in building and growing a strong business. Proficiency in Microsoft Excel, Outlook, and Word applications is required. Must be able to communicate effectively with clients, customers, and support staff and be able to respond effectively to changing demands. Strong ability to plan work schedules, assign duties, and to provide or arrange for required training. Ability to read, understand, follow, and enforce safety and other procedures. Strong communication, organization, problem-solving, and follow-up.
