Position Summary:

Responsible for portion and merchandising all bone-in meat products.

Essential Functions:

  • Works with supervisors and production managers to schedule production.

  • Cleans, trims, slices, and portions subprimals of beef, pork, lamb and veal for future processing.

  • Inspects meat products for defects, bruises or blemishes and remove.

  • Accurately read and comprehend all customer specific special instructions.

  • Perform Quality Control checks and communicate with supervisors and manager any defects.

  • Separates meats and byproducts into specified containers and seal containers.

  • Uses knives, cleavers, band saw and/or other equipment to perform meat cutting and trimming.

  • Weighs meats and tag containers for weight and contents.

  • Follows company's detailed product specifications.

  • Performs other duties as assigned.

Knowledge / Skills / Abilities:

  • Must have working knowledge of production equipment.

  • Demonstrates ability to portion all cuts of meat in an accurate and timely manner.

  • Ability to reduce processing costs by cutting and sizing portions accurately with good yields as well as meeting customer specs.

  • Ability to problem solve in terms of trimming and product substitutions.

  • Ability to work in a fast paced, high pressure, challenging environment

  • Must be a team player and possess a positive attitude.

  • Ability to effectively communicate, both written and verbally, in English.

  • Must demonstrate the ability to understand the Meat Buyer's Guide specifications as they relate to the company's internal product specifications.

  • Ability to tie a standards butcher's knot for tying roasts and chops.

  • Follows company's Quality Control procedures.

  • Vacuum Packaging Machine

Minimum Years of Experience:

Minimum of 2 years experience as a professional cutter. High-end meat processing experience strongly preferred.

In lieu of the specified education and experience requirements, a proven capability to perform the essential functions of the job, as demonstrated by an equivalent combination of education, training and/or relevant work experience may be considered
